Morioka Reimen (盛岡冷麺, Morioka reimen) is a chilled noodle dish originating from Morioka City in Iwate Prefecture, inspired by traditional Korean cold noodles. It was creatively developed in 1954 by Teruto Aoki, founder of the restaurant Shokudoen, who adapted the traditional Korean Hamhung and Pyongyang naengmyeon to craft this unique local specialty.
What sets Morioka Reimen apart is its springy, delightfully chewy noodles and its light yet flavorful broth, made by carefully simmering beef bones and chicken. The richness of the chilled broth perfectly complements the unique texture of the noodles, creating a harmonious and refreshing dining experience.
