Kagoshima Prefecture is one of Japan's leading producers of rakkyo (pickled shallots), accounting for nearly 30% of the national production. Among its regions, the coastal area of Fukiagehama is particularly renowned as the heart of rakkyo cultivation. While the sandy soil in this area doesn’t hold water well and isn't suitable for most crops, it is perfect for growing large, sweet, and delightfully crunchy rakkyo.
These rakkyo, grown under the bright sun and coastal breezes of Kagoshima’s sand dunes, are known for their pale white color, fine fibers, and crisp, refreshing texture. Appreciated as the perfect sidekick at the dining table, they boast a unique aroma and crunchy bite. Rakkyo is rich in allicin, a compound also found in onions and garlic, which enhances the absorption of vitamin B1. Pairing them with vitamin B1-rich foods like pork can boost their nutritional benefits even further.
