About Ishikari Nabe
Ishikari Nabe (石狩鍋) is a traditional hot pot dish from Hokkaido, featuring salmon as the star ingredient, seasoned with a rich miso base.
This comforting dish combines salmon pieces—both meat and bones—with tofu, and a variety of vegetables such as onions, cabbage, daikon radish, shiitake mushrooms, carrots, and green onions. Everything is simmered in a flavorful broth made from kombu (kelp) dashi and miso.
For an extra depth of flavor, a sprinkle of sansho (Japanese pepper) berries or powder is added as a final touch. It’s a dish that truly showcases the taste of Hokkaido.
