Sanuki Ramen: Udon Culture Meets Niboshi, Exquisite Harmony of Deep Richness and Golden Soup
Kagawa

Sanuki ramen introduction

“Sanuki ramen” is a local ramen born in Kagawa Prefecture, and represents a new ramen culture rooted in Kagawa, known by the name of Sanuki udon. Utilizing the rich natural blessings of Kagawa Prefecture, the soup uses the finest irico (dried sardines) caught in the western part of the prefecture, small fish from the Seto Inland Sea, and chicken and pork from Kagawa prefecture. The golden-colored soup has a light yet deep richness, making you feel a unique flavor even though it is simple. The noodles make use of Kagawa's traditional udon techniques, and perfectly blend the texture of Sanuki udon with the texture of Chinese noodles. Sanuki ramen has slightly different characteristics from store to store, so one of the attractions is that you can enjoy different flavors while eating while walking. In Kagawa prefecture, the popularity of Sanuki ramen is increasing, and the number of stores where people line up is increasing.
