Hana-zushi (花ずし, Hana-zushi) is a unique pickled dish from Akita Prefecture made using eggplant. The eggplants are hollowed out and filled with edible chrysanthemums, chili peppers, and glutinous rice before being pickled with rice malt. One of its standout features is its vibrant appearance, showcasing the deep purple of the eggplant, the bright yellow of the chrysanthemums, and the vivid red of the chili peppers—a visually charming creation. This traditional pickle is typically prepared in households in the southern part of Akita and is often served during festive occasions such as Obon and New Year. The natural sweetness of the glutinous rice complements the slight bitterness of the edible chrysanthemum and the spiciness of the chili, creating a delicate and perfectly balanced harmony of flavors.
