Nattō Soup introduction
Nattō Soup (納豆汁, Nattō jiru) is a miso soup blended with carefully ground nattō, or fermented soybeans. It is a beloved traditional dish from the southern region of Akita Prefecture. The ground nattō is dissolved in a flavorful dashi broth and seasoned with miso to create a rich and hearty soup. The ingredients vary from household to household, but common additions include tofu, mushrooms, wild vegetables, and chopped green onions as garnish. While it doesn’t visibly show the nattō, its aroma and richer-than-usual taste set it apart from plain miso soup. It also retains heat well, making it the perfect dish to warm up with during the cold winter months.
