Yosare Nabe
A fusion of Tsugaru tradition and flavor — Aomori Prefecture's heartwarming local dish, "Yosare Nabe"
Yosare Nabe introduction
"Yosare Nabe" is a traditional dish from Kuroishi City in Aomori Prefecture that beautifully intertwines the area's cultural heritage with culinary excellence. This hot pot dish is named after "Kuroishi Yosare," a traditional bon dance of Kuroishi City. The origins of "Kuroishi Yosare" date back approximately 500 to 600 years to love songs exchanged between men and women during bon festivals. In the late Edo period, the Kuroishi feudal domain encouraged this dance as part of their economic revitalization measures, and it gained significant popularity. The key ingredients of "Yosare Nabe" are locally sourced chicken known as "Gomadori," specifically the Yellow Barred Plymouth Rock breed, and fresh vegetables from Aomori Prefecture. Diners can select two types of flavors from four options: salt-based broth, soy-sauce-based broth, ponzu sauce, and a dipping sauce blended with garlic, ginger, and grated daikon radish. These flavors are served simultaneously in a divided iron pot, allowing you to savor two distinct tastes at once. The chicken, the central ingredient, is high in protein, low in fat, and rich in B vitamins and minerals, making it a healthy choice for all. Commonly, local udon noodles made from rice grown in Aomori are added at the end of the meal, ensuring that diners can thoroughly enjoy the local flavor until the last bite. "Yosare Nabe" is offered at local izakayas and restaurants, especially cherished during the chilly seasons for its ability to warm both body and soul. It pairs exquisitely with local Japanese sake, including smooth and mellow junmai sake or crisp ginjo sake, further enhancing the richness of the hot pot's flavors. When visiting Kuroishi City, take the opportunity to enjoy "Yosare Nabe," a dish that encapsulates the history and culture of the region in every bite!
