Beppu Reimen (Cold Noodles) introduction
Beppu Reimen (別府冷麺) first made its debut in Beppu around 1950, when a chef who had returned from Manchuria (northeastern China) opened a noodle shop. In Manchuria, where many Korean ethnic communities lived, Korean food culture had a significant influence, including their signature cold noodles. Beppu Reimen is said to be a Japanese-style adaptation of these traditional Korean cold noodles. The noodles for Beppu Reimen can be divided into two main types: thick and chewy noodles with a pleasantly springy texture, and medium-thin noodles that are silky smooth and easy to slurp. One common feature is the refreshing soup base, which is typically made with a Japanese-style dashi broth. Many restaurants take pride in using homemade noodles, often crafted by pressing hand-kneaded dough through special noodle-making machines—an impressive sight that adds to the charm of the dish.
