Fresh horse mackerel, yellowtail, etc. that have just been caught are cut and washed in seawater quickly, cut into bite-sized pieces, soaked in soy sauce, placed on freshly cooked and hot rice, mixed vigorously, and eaten. The origin of “atsumeshi” seems to have been derived from the fact that pickled fish is placed on freshly cooked hot rice, and it is written as “hot rice” in kanji. For even more fun, you can pour hot tea when you eat it to a certain extent, and if you eat it with ochazuke, the raw fish tightens and you can enjoy a different texture.
