Hatahata Sushi (ハタハタ寿司) is a special dish made when the hatahata fish, also known as sandfish, becomes abundant and its skin becomes thinner in spring. In Tottori City's Karo District, a famous fishing port for hatahata, this sushi is traditionally enjoyed as a festive dish during the Hoe-nya Festival held in this season. Unlike typical sushi, Hatahata Sushi doesn't use rice but instead features okara, or soy pulp. The dish highlights the tender texture of the hatahata fish combined with a pleasant touch of tartness, offering a unique taste distinct from regular hatahata preparations. Each family has their own twist on the recipe, making the flavors delightfully varied with no fixed formula.
