Gyoda fry is a local dish that originated in Gyoda City, Saitama Prefecture, and is an okonomiyaki-style dish made by dissolving flour in water and grilling it on an iron plate. It's pottery, not deep-fried food, but there are various theories, such as the theory that Gyoda was called “furai (furai)” because it flourished in the cloth industry, and the theory that it comes from the fact that it was first grilled in a frying pan. Put pork or chopped green onions on the dough that has been thinly rolled out of flour and finished by sprinkling a sauce made with soy sauce or mirin. Although it is a simple ingredient, the crispy burnt surface and the fluffy texture of the dough are attractive. There are many “fry shops” in Gyoda city, and they are loved not only by locals but also by tourists. Gyoda fries are cheap and make you hungry, and in the early Showa period, they became established as a popular snack for women working in tablecloth factories.
