Miso-Marinated Pork (豚肉の味噌漬け, Butaniku no misozuke) is a specialty of Atsugi in Kanagawa Prefecture. It originated with wild boar meat marinated in miso, a practice dating back to a time when eating four-legged animals was uncommon. To conceal the type of meat, it was grilled with the miso still on it. To everyone's surprise, the result was exceptionally delicious. Today, this dish highlights the juicy flavor of pork, enhanced by the umami of miso. You can now choose from a variety of miso types, offering a unique twist to this delightful dish.
