Beef tongue (牛タン, Gyūtan) is one of the must-try local specialties for those visiting Miyagi Prefecture. In the case of Sendai-style beef tongue, the preparation begins with carefully peeling the outer skin off the tongue, followed by slicing it into thick, hearty pieces. Afterward, it undergoes a special aging process known as "shikomi" over several days to enhance its flavor and texture. These thickly sliced cuts are seasoned and grilled to perfection, served in savory salt or miso flavors.
