Shiroishi noodles (shiroishi umen) are a local specialty produced in Shiroishi, Miyagi prefecture.
The length of the noodles is as short as 9 centimeters, and it has a unique texture. Also, it is one size thicker than normal somen, so you can feel the taste of the noodles firmly.
When making somen noodles, cooking oil is used to prevent dryness, but Shiraishi Onmen does not use oil.
It is said that this manufacturing method began about 400 years ago when a son who was worried about his father suffering from a stomach was taught by a traveling monk and made it.
It was named “Uichimen” in honor of the warm feelings of his dutiful son.
