About Motsu Nabe
Motsu Nabe (もつ鍋, Motsu nabe) is a traditional hot pot dish from Fukuoka, with its origins in cooking beef or pork offal (hormone) and garlic chives in a simple soy sauce-based broth using an aluminum pot.
The highlight of Motsu Nabe is undoubtedly the "motsu" (offal)! Different restaurants use various cuts of beef or pork offal, and the flavor of the dish can vary depending on the freshness and preparation of the ingredients.
For the finishing touch, it's common to add champon noodles. While some places might opt for rice or udon instead, we highly recommend trying champon noodles with Motsu Nabe. The rich broth, infused with the flavors of the offal and vegetables, pairs perfectly with these hearty noodles!
