Morioka Jajamen Noodles (盛岡じゃじゃ麺, Morioka jajamen) are a traditional dish from Morioka City in Iwate Prefecture, recognized as one of the three major noodle dishes of the region.

This unique dish was created after World War II by Mr. Kansho Takashina, who was inspired by "Zhajiangmian" (炸醤麺), a Chinese noodle dish he had tasted while in Manchuria before the war. Using local Japanese ingredients, he adapted the recipe and developed the distinctive style of Jajamen in Morioka.

Jajamen features thick, flat noodles similar to udon, topped with a special meat miso sauce, cucumber, and green onions. To enhance the flavor, diners can mix in grated ginger, garlic, vinegar, chili oil, or other seasonings to suit their taste. The secret to fully enjoying this dish lies in thoroughly mixing the ingredients and seasonings to create a flavor unique to your liking, making each bowl a personalized delight.

The experience doesn’t end there. After finishing the noodles, diners can crack a raw egg into the bowl, add hot noodle cooking water, and mix it with the leftover meat miso to create a flavorful soup called "Chiitantan" (鶏蛋湯). This hearty soup, combining the richness of the miso and the velvety texture of the egg, serves as the perfect way to conclude the meal.

Nutritionally, a serving of Jajamen (approximately 400g) provides about 460kcal, with 19.85g of protein, 20.3g of fat, and 47.7g of carbohydrates, offering a well-balanced meal.
