Gokase Yamame introduction
Gokase Yamame (五ヶ瀬やまめ) is cultivated in Gokase Town's Yamame no Sato fish farm, located 700 meters above sea level in the heart of the Kyushu Sanchi mountain range, drawing from the pristine headwaters of the Gokase River. Established in 1963, this project began with efforts to artificially hatch wild yamame trout native to the Gokase River's sources. By 1964, the team succeeded in artificial hatching, and by 1967, they had developed a sustainable breeding cycle by harvesting eggs from the cultivated parent fish. The farm utilizes the mineral-rich spring waters that flow through layers of Aso limestone, tuff, and ancient geological formations, as well as the crystal-clear headwaters of the Gokase River, recognized as one of Japan's most beautiful rivers. Thanks to its ideal natural conditions, Gokase Yamame can be raised without any medical additives or antibiotics, ensuring a nurturing environment that mimics the fish's natural habitat as closely as possible.
