Hitomoji Guruguru (一文字ぐるぐる, Hitomoji guruguru) is a unique dish from Kumamoto Prefecture, featuring a local variety of green onions. While commonly referred to as "wakegi" in other parts of Japan, the green onions grown in Kumamoto are thicker and have a more pronounced white bulb. The name "Hitomoji" ("one character") is said to come from the way the plant's shape resembles the Japanese character for "person (人)."
True to its name, this dish involves quickly blanching the green onions, cooling them, and then skillfully coiling them around the base of the bulb. They are served with a tangy-sweet miso-vinegar sauce. Each tightly wrapped bite offers a satisfying crunch, coupled with the unique aroma, sweetness, and hint of spiciness that define Hitomoji.
