About Kado Yaki
Kado Yaki (カド焼き, Kado yaki) is a dish featuring herring, which is widely enjoyed across Yamagata Prefecture.
In the Tohoku region, herring is called "Kado," a name derived from the fish being caught near the doorsteps of homes ("kado" means "gate" or "doorstep" in Japanese). It is also known as "Harutsugeuo" or "spring messenger fish," as it appears in northern seas during the spring spawning season.
In Shinjo, there is a long-standing custom of grilling Kado as the snow melts, making it a beloved spring tradition in the area.
