Kado grilled introduction

Kado is a herring that is eaten widely in Yamagata Prefecture. In the Tohoku region, it is said that herring for spawning was caught at the gate, so it came to be called kado. It is also called “Harutsugeoo” because it appears in the northern sea during the spawning period of spring. Today, the tradition of baking and eating kado, which can be eaten during the melting season, has become a spring feature of Shinjo today.
