Hakodate Ramen
Light, salty broth with thin noodles—an irresistible combination
Hakodate Ramen introduction
Hakodate Ramen (函館ラーメン, Hakodate ramen) is one of Hokkaido’s most beloved local ramen styles, alongside Sapporo Ramen and Asahikawa Ramen. Its clear, salty soup is made with a rich dashi broth derived from pork bones and chicken stock, seasoned with a shio tare (salt base). This comforting soup pairs perfectly with medium-thin, straight noodles cooked to a tender texture. Common toppings include tender slices of char siu pork, bamboo shoots, scallions, spinach, and occasionally wheat gluten or naruto (fish cake).
