Mito Domain Ramen (水戸藩ラーメン, Mito Han Ramen) is a local specialty from Mito City in Ibaraki Prefecture. It recreates the ramen believed to have been enjoyed by Tokugawa Mitsukuni, also known as Mito Komon, who is said to be the first person in Japan to eat ramen.

This ramen features noodles infused with locally grown lotus root and seasonings known as "Goshin," or five spicy elements (chives, pickled shallots, green onions, garlic, and ginger) that provide a warming boost to the body. The noodles, enriched with lotus root powder, have a distinct flavor and texture, offering both deliciousness and potential health benefits reminiscent of medicinal cuisine.

The dish reflects a strong Chinese cultural influence brought over by Zhu Shunshui, a Confucian scholar whose teachings Mitsukuni once studied. The use of ingredients and soup preparation align with the traditional Chinese philosophy of Wu Xing, or the Five Elements Theory, faithfully recreating a historical dining experience.
