About Ibonoito
Ibonoito (揖保乃糸, Ibonoito) is a proud specialty from the Banshu region along the Ibo River in the southwestern part of Hyogo Prefecture. It is recognized as one of Japan's top three somen noodles.
Made from carefully selected wheat and Akoh salt, it is crafted using a traditional hand-pulled technique that has been passed down for over 600 years. Skilled artisans meticulously produce these noodles through repeated aging and stretching, resulting in a premium delicacy of the Banshu region.
The noodles, made by twisting strands like a rope and refining them through a process of aging and stretching, are firm, resilient, and delightfully easy to bite through.
