Shio Yakisoba (塩焼きそば, Shio yakisoba) was created around 60 years ago by the owner of a Chinese restaurant who, inspired by Chinese stir-fried noodles known as "chow mein," sought to craft an even more flavorful dish. Today, it stands alongside Komatsu Udon as a beloved soul food of Komatsu City. This dish features thick, specially developed noodles made exclusively for Shio Yakisoba. They're stir-fried with crisp, fresh vegetables like bean sprouts, green onions, and carrots, all grown locally. The seasoning centers around salt, but the real charm lies in the rich flavor enhanced by each shop's secret soup stocks and locally crafted soy sauces.
