Tamana City, in northern Kumamoto Prefecture overlooking the Ariake Sea, has long been known as a hot spring town—and as the birthplace of Kumamoto Ramen. Based on Kurume Ramen, Tamana Ramen pairs a rich pork-bone broth with medium-thin noodles, flavorful chashu pork, and roasted garlic, a combination that is hard to beat.
