Kameyama ramen is a new local ramen born in Kameyama City, Mie Prefecture. It won the “Gotochi Ramen Grand Prix” in 2013 and spread its name all over the country. This ramen is made with a focus on ingredients from Mie Prefecture, making it a cup where you can feel the blessings of the local area. The soup is a unique miso soup that blends 3 types of red miso, bean miso, and barley miso based on beef bones from Mie prefecture, and has a perfect balance of richness and umami. The noodles use medium-thick noodles made with the wheat “Nishino Kaori” from Mie prefecture, and the chewy texture goes well with the soup. Furthermore, three types of mushrooms from Mie prefecture are used as toppings, and “oyster mushrooms,” “hanabiratake,” and “hatake shimeji,” and you can enjoy different textures and flavors. There is a slight scent of butter in the air, adding a mellow flavor to the entire ramen.
