Mito Domain ramen is a local ramen from Mito City, Ibaraki Prefecture, and is a reproduction of the ramen that Tokugawa Mitsuyoshi (Mito Komon), who is said to have eaten the first ramen in Japan. The characteristics of this ramen are noodles kneaded with lotus root, a local specialty, and condiments called “five spices” (leeks, leeks, green onions, garlic, and ginger) that warm the body. Noodles with lotus root powder added have a unique flavor and texture, and are expected to have medicinal effects.

This ramen strongly retains the influence of Chinese culture conveyed from the Confucian scholar Zhu Shunshui, who Mitsukuni learned, and the way ingredients are selected and soup made based on the Five Elements has been faithfully reproduced.
