Yoshino Torimeshi (吉野鶏めし) is a beloved home-cooked dish passed down in the Yoshino area of southern Oita City. Its origins trace back to hunters who prepared this dish using chicken to welcome their guests. Over time, it became a cherished local specialty served during family gatherings and special occasions. This flavorful mixed rice is made by simmering chicken and burdock root in a savory blend of sake, soy sauce, and sugar, then mixing it with freshly steamed rice. Often enjoyed as rice balls, this dish showcases the best of local ingredients. The rice used is Oita-grown Hinohikari, known for its wonderfully chewy texture, while the chicken and burdock root are sourced from Kyushu. The seasoning, blended specifically for torimeshi, features soy sauce, sugar, and sake that are carefully simmered to create its distinctive taste.
