About Suzume Sushi
“Kodai Suzume Sushi (雀寿司)” is a traditional sushi from Wakayama Prefecture and one of its most iconic local delicacies.
This sushi features small seabream (kodai, also called "charihko") measuring 6–7 cm, carefully butterflied, marinated in vinegar, and placed atop seasoned sushi rice. The sushi is named after its delicate, sparrow-like appearance, with the pinkish seabream and intact tail resembling a plump sparrow in bloom.
Typically arranged in an octagonal container, the sushi is beautifully displayed in a radial pattern, with five tails in the center overlapping like flower petals. Prepared with just the right touch of salt to enhance the natural sweetness of the kodai, this sushi is enjoyed as is, without soy sauce, in the authentic traditional style.
