About Pickled Mamakari
Pickled Mamakari (ままかり酢漬け, Mamakarizuzuke) is a traditional dish and a local specialty of Okayama Prefecture. The name "Mamakari" comes from a saying that this dish is so delicious, you'd even "borrow rice" ("mama" means rice, and "kari" means borrowing) to keep enjoying it.
In Okayama, Mamakarizuzuke is prepared in many ways, including pickling, serving as sashimi, or grilling with salt. Among these, pickled Mamakari used in Barazushi, a colorful rice dish, is considered a celebratory delicacy for special occasions in Okayama.
