Hida Takayama Ramen (飛騨高山ラーメン) is a specialty ramen primarily enjoyed in Takayama, Gifu Prefecture.
The soup is a light soy sauce base made with chicken stock, paired with extremely thin, curly noodles. Unlike most ramen, where the soup stock and seasoning (tare) are prepared separately, Hida Takayama Ramen stands out by blending and simmering the soup and tare together, creating its unique flavor profile.
