Octopus Rice
The renowned "Shimotsui Octopus" from Kurashiki City, Okayama
About Octopus Rice
Okayama Prefecture is one of Japan’s leading octopus-producing regions. The octopus caught near the Shimotsui area of Kurashiki City, known for its swift currents in the Seto Inland Sea, is celebrated for its unique, firm texture and rich flavor.
A specialty of Kurashiki, "Octopus Rice" (たこめし, takomeshi) is a savory dish where rice is soaked and then cooked in a pot with dashi broth, soy sauce, sake, and thinly sliced octopus. The result is a fragrant, umami-packed meal that highlights the freshness of the ingredients. It is said that this dish originated from fishermen preparing freshly caught octopus aboard their boats.
Today, this delicacy made with fresh octopus is enjoyed throughout Kurashiki City—served in local restaurants, featured in regional events, and lovingly prepared in households, particularly in the Kojima area of Kurashiki.
