Whole Horse Mackerel Sushi (あじの丸ずし, Aji no Maruzushi) is a traditional dish from Saiki City, located in the southeastern part of Oita Prefecture.
The horse mackerel, or "aji," has long been cherished in this region. The Bungo Channel, with its clean waters where warm Kuroshio currents from the south meet cold currents from the Seto Inland Sea, creates a nutrient-rich environment perfect for fish to thrive. Horse mackerel caught in this area are known for their fatty, flavorful meat, earning them a stellar reputation. With abundant catches, aji is used in various local dishes and processed foods, and in 2007, it was officially recognized as the city's fish.
One such local delicacy is Whole Horse Mackerel Sushi. This unique dish features a whole aji marinated in plum vinegar and wrapped with red shiso leaves. The use of shiso not only adds a refreshing flavor but also helps preserve the sushi.
