Steamed sushi introduction

“Steamed sushi” is a specialty of Matsue, and it is warm sushi made by putting ingredients on vinegared rice and steaming it. Abundant ingredients such as shrimp, eel, beef shigure-ni, chestnut kanroni, kinshi eggs, and kamaboko are placed on vinegared rice mixed with bamboo shoots and shiitake mushrooms, then steamed with seiro. By using seiro, the flavor soaks into the ingredients and creates a fluffy texture. It is particularly popular in the winter in Matsue, and it is said that the first “naniwa-zushi” invented by the wife of the first generation began. “Steamed sushi,” which inherits the tradition of sushi heated in a steaming basket in the Kansai region, and carefully prepared by artisans, has become a specialty representing Matsue City.
