Sanma Sushi (さんまずし, Sanma sushi) is a beloved traditional sushi that has been prepared in households for festivals and New Year celebrations for generations. Originating as a preserved food, this dish has a history spanning over 1,500 years in the Kumano region. The Pacific saury, known as "sanma," caught in the Kumano-nada Sea, is particularly prized. These fish migrate south from the Sanriku coast, riding the cold currents to Kumano-nada. This long journey through the tides firms up their flesh and reduces excess fat, making them ideal for sushi. The fish is prepared whole, with the head intact, and butterflied before being marinated in a citrus and vinegar mixture. It is then wrapped around sushi rice. With each bite, the unique aroma of citrus vinegar fills your mouth, perfectly enhancing the rich flavor of the sanma. The dish’s flavor varies depending on the choice of citrus, such as yuzu, daidai, jabara, and other varieties abundant in Wakayama, offering a unique taste for each household or restaurant.
