Kisakata, Nikaho City, Akita Prefecture is a town facing the Sea of Japan at the southern tip of Akita prefecture, and the rock oysters landed here are branded as “rock oysters from Kisakata.” There is a 2336m active volcano called Mt. Chokai in Kisakata Town. Meltwater flowing from a high mountain becomes underground water containing abundant nutrients such as minerals, and is poured into Kisakata as spring water to nurture abundant plankton that feeds oysters. Also, because the temperature of the underground water is very low, the natural rock oysters of Kisakata, which have grown larger over a period of time than usual, are firm even though they are large, and have plenty of rich umami. Large rock oysters are landed in the summer when meltwater flows out. If you cheek, you can enjoy the moderate saltiness, the scent of the tide, and the milky and rich umami in your mouth.
