Jusanko Freshwater Clam Ramen
Ramen made with the most delicious shijimi in JapanJusanko Freshwater Clam Ramen introduction
Lake Jusan, located in the northwestern part of Goshogawara City, is a brackish lake with a mixture of water and freshwater. Goshogawara's original shijimi ramen is a local ramen that uses “Yamato Shijimi Clams from Lake 13” that can be harvested here. Yamato shijimi from Lake 13 is said to be “the most delicious shijimi in Japan”, and the cloudy soup that combines the extract and dashi that overflows from the sea clam has a rich taste and plenty of umami. Depending on the restaurant, there are differences such as salty taste and slightly fragrant miso flavor, but you can enjoy the flavor and umami of shijimi in any store's soup.
