Komatsu Udon (小松うどん, Komatsu udon) is a cherished specialty with over 300 years of history, even enjoyed by the famous haiku poet Matsuo Basho. Originating in the Edo period, it was presented to the Kaga domain and offered as a gift to shoguns and feudal lords. The hallmark of Komatsu Udon is its thin yet firm noodles, crafted with the pure spring water from Mount Hakusan. Paired with a delicately light broth made from fish flakes and kombu (kelp), it offers a silky texture with the perfect balance of chewiness and smoothness, perfectly complemented by the homemade dashi broth.
