The local dish “jabu” from Shinonsen-cho, Mikata-gun, Hyogo prefecture is a home-cooked dish made by simmering chicken, tofu, konnyaku noodles, burdock root, onions, etc. in soy sauce or mirin. The name “jabu” comes from the fact that water comes out of vegetables and tofu during cooking and makes a “jabu-jabu” noise. This dish is made in large pots on special days such as festivals, Obon, and ceremonial occasions, and has been served to many people. The ingredients used vary depending on the region and household, but mainly meat such as chicken, beef, and pork, and fresh vegetables harvested locally. In particular, since it is simmered only in the water that comes out of tofu and vegetables, it is characterized by a flavor that condenses the original flavor of the ingredients. In terms of nutrition, chicken is high in protein and low in fat, and burdock and onions are rich in dietary fiber, making it a healthy dish. Also, the sweet and spicy flavor based on soy sauce goes great with rice, and is popular as a staple dish to decorate the home table. Currently, packaged products are sold by the local processing group “Suzushiro Group,” and they are also offered at tourist events. It is also included in the menu of the local Izumi Association's parent-child cooking class. Be sure to try “jabu” when you visit Shinonsen.
