Jabu introduction

Jabu (じゃぶ) is a comforting local dish from Shinonsen Town in Mikata District, Hyogo Prefecture. This homestyle stew features chicken, tofu, shirataki noodles, burdock root, onions, and other vegetables simmered in a savory-sweet soy sauce and mirin broth. Its unique name, "Jabu," is said to come from the "jabu-jabu" sound made as water naturally releases from the vegetables and tofu during cooking. Historically, Jabu has been prepared in large pots for festive occasions such as local festivals, the Obon holiday, weddings, and funerals, serving as a communal meal for many. The ingredients used vary by household and region but typically include chicken, beef, or pork along with plenty of fresh local vegetables. The dish is notably cooked using only the moisture released from the tofu and vegetables, resulting in a concentrated, rich flavor that highlights the ingredients’ natural essence.
