Shirakawa Ramen (白河ラーメン, Shirakawa ramen) originated in Shirakawa City, Fukushima Prefecture, and is a beloved local ramen characterized by its expertly handmade curly noodles and rich soy-based broth made from chicken and pork bones. Despite being clear, the broth boasts a deep, flavorful richness with a light and satisfying finish. The noodles, with their high water content, offer a firm yet smooth texture, perfectly complementing the broth for a truly rewarding bite. Common toppings include fragrant char siu pork grilled over charcoal and then simmered, fresh green onions, spinach, bamboo shoots, and iconic pink-and-white naruto fish cakes. Shirakawa City is home to over 100 ramen shops, each offering unique and creative takes on this classic dish. The Shirakawa ramen style was pioneered by Mr. Toraji Takei, the founding chef of "Tora Shokudo," and his techniques have been passed down through many of his disciples, spreading this ramen culture across Japan.
