Hachinohe ramen introduction

“Hachinohe ramen” is a local ramen that has been loved for many years in Hachinohe City, Aomori Prefecture. It began when Mr. Zheng Keying, who moved to Hachinohe from China around 1928, opened the cafeteria “Rairakken,” and continues to preserve its traditional flavors. The characteristic of Hachinohe ramen is a light soy sauce soup made from dried sardines and chicken bones. The slight flavor of dried sardines drifts through the air, and the gentle taste that makes you feel nostalgic is attractive. The thin, hand-kneaded noodles are well entwined with the soup and enhance the simple yet deep flavor. The toppings are an orthodox combination of pork, green onions, and menma, and it makes you feel familiar. In 2002, the “Hachinohe Ramen Association” was established on the occasion of the opening of Tohoku Shinkansen Hachinohe Station, and traditional ramen from Hachinohe was reprinted as a “nostalgic old taste.” Today, it is offered as a souvenir at local restaurants, and simple, old-fashioned ramen is once again attracting attention.
