Sanjo Curry Ramen (三条カレーラーメン, Sanjo karee ramen) boasts a history spanning over 70 years, and today, more than 70 restaurants in Sanjo City serve this iconic dish. It’s said that a restaurant in Sanjo City called "Daikokutei" is the birthplace of curry ramen. The first-generation owner of the establishment was reportedly inspired by curry he encountered while working at a restaurant in Tokyo before World War II. The flavors and styles of curry ramen differ from one shop to another: from soup-based varieties to curry poured over noodles, dipping styles, chilled versions, and even those enriched with back fat.
