Atsugi Shirokoro Horumon (厚木シロコロ・ホルモン) is a delicious dish of grilled pork large intestine. Atsugi City, home to Kanagawa Meat Center, known for its high-volume meat processing, has easy access to fresh pork and offals. The city boasts nearly 50 restaurants specializing in pork offal barbecue, making it a beloved local specialty. In typical barbecue restaurants, offals are often served flat, sliced open, boiled rather than raw, and sold under the name "shiromotsu" for both beef and pork. However, in Atsugi's barbecue establishments, the pork large intestine is left uncut, retaining its tubular shape along with a reasonable amount of fat. It is sold fresh, cleaned carefully, and distributed to local meat shops and restaurants on the same day the pigs are processed. The unique texture comes from the combination of the soft outer skin and the thick, fatty interior. When cut into bite-sized pieces and grilled over a net, the outer skin contracts, creating its signature round, plump appearance. Most restaurants in Atsugi offer their own original sauces, with miso-based sauces being the most common. Another variation of this grilled offal dish features the tubular intestine cut into chunks, known as "marucho." These delicious bites are a must-try for anyone visiting Atsugi!
