Tsuruga ramen is a local ramen that originated in Tsuruga City, Fukui Prefecture, and is particularly characteristic of being served at night food stalls. This street ramen, which began in 1953, features soy sauce soup based on pork and chicken bones, and has an old-fashioned simple yet deep flavor. At night in the port town of Tsuruga, the scene where food stalls gather along with the sound of chalumera is still a local tradition. The soup has a soy sauce flavor that perfectly combines rich pork bones and chicken bones, providing the perfect warmth for cold nights. Roasted pork, bamboo shoots, and pickled ginger are standard ingredients, and the noodles use curly noodles with a lot of water, so you can enjoy the texture that goes perfectly with the soup. Food stalls are still lined up in front of Tsuruga Station and along National Route 8, and it continues to be loved by tourists and locals as a “ramen street.”
