Fukuoka Udon introduction
Fukuoka Udon (うどん, Fukuoka udon) is unique for its soft-textured noodles. The delightful combination of fluffy, chewy noodles and a mild, soothing broth is what makes it so special. Unlike the firm noodles found in other regions, Fukuoka's udon reflects the area's deep-rooted culture. Historically, Fukuoka—especially the Hakata district—flourished as a merchant city. To accommodate the busy lifestyles of merchants, pre-cooked udon became popular for its quick preparation. Additionally, the wheat used to make udon in Kyushu is similar to that used in soy sauce production, which has a naturally lower protein content. This contributes to the noodles’ softer texture compared to those from other regions. Fukuoka udon is also famed for its "Three Udon Giants”: the popular chains "Udon West," "Kamaage Maki no Udon," and "Sukesan Udon.”
