Kagoshima prefecture is a shallots production area that accounts for almost 30% of the national production, but especially the coast of Fukiage Beach is the center of shallots production. This area is not suitable for growing many crops due to the sandy soil with low water retention, but in the case of shallots, it is possible to harvest crispy sweet large balls. Growing up in the sand dunes of Kagoshima prefecture under the sun and sea breeze, they have fair skin, fine fibers, and are popular for their crispy texture. The unique flavor and crispy texture are popular as a supporting role on the dining table, and it contains a lot of allicin (allyl sulfide), which is also contained in onions and garlic. This allicin has the effect of helping the absorption of vitamin B1, and is effective when combined with foods such as pork that contain vitamin B1.
