Kokera Sushi (こけら寿司, Kokera zushi) is a cherished part of Kochi Prefecture's rich sushi culture, reflecting the region's deep culinary traditions. Sushi in Kochi comes in many forms, from the well-known nigiri to unique variations like pressed sushi, whole fish sushi, and even vegetable-based sushi. In times past, rice was a valuable commodity, making sushi a true delicacy and a centerpiece of special occasions. Whether it was weddings, funerals, promotions, or milestone celebrations like a sixtieth birthday, sushi was always part of these joyous and significant events. Among these, "pressed sushi" is especially notable. Kokera Sushi, a traditional specialty of Toyo Town, falls into this category. It is made by layering vinegared rice and ingredients in a wooden square mold, creating a colorful and visually appealing dish reminiscent of a decorated cake. This layering process symbolizes "building layers of joy," giving the dish a special meaning as a good luck charm passed down through generations.
