Kokerazashi introduction

Sushi culture is one of the most representative food cultures of Kochi Prefecture. There are a wide variety of variations, and not only common nigirizushi, but also “shizushi”, “figure zushi”, and “vegetable zushi.” When rice was precious, sushi was a kind of feast. Sushi has always been eaten on Halle days such as ceremonial ceremonies, celebrations, and family celebrations. One of the typical sushi is “shizushi”. One kind of “Oshizushi” is a local dish of Toyo Town, kokezushi. It features a colorful appearance like a decorative cake with a “pressed sushi” that is layered with vinegar rice and ingredients on a square wooden frame. The appearance of stacking the ingredients on top of layers has the meaning of “overlapping joy” and is conveyed as a lucky one.
