It is said that “ikameshi” was invented as an ekiben of Mori Station on the Hakodate Main Line, as rice shortages in food control intensified during World War II. The ingredients I used as “a dish that can save a little rice” were easily available because they were caught in large quantities in the province of Hokkaido at that time. Ikameshi, which is cooked with squid stuffed with rice, has a reputation for being easy to eat, and it is still a popular ekiben that many people buy every time a train arrives.
