Ikameshi (いかめし), a famous local dish from the Hakodate and Oshima regions of Hokkaido, has a fascinating history. It was first created during World War II as a bento meal sold at Mori Station on the Hakodate Main Line, amidst a nationwide rice shortage caused by food rationing. In an effort to conserve rice, locals turned to squid as a readily available ingredient, thanks to the abundant squid catches in the southern areas of Hokkaido. Ikameshi is made by stuffing squid with rice and simmering it to perfection. This dish gained popularity for being both convenient and satisfying, and it remains a beloved specialty to this day. Even now, it’s a must-buy item for train passengers whenever they stop at Mori Station!
