Kurume Ramen introduction
Kurume Ramen (久留米ラーメン, Kurume ramen) is a Kyushu-style tonkotsu (pork bone) ramen known for its rich, creamy white broth and straight noodles. While tonkotsu ramen is now popular nationwide, its origins can actually be traced to Kurume City in Fukuoka Prefecture! What sets Kurume Ramen apart is its unique method of broth preparation called "tsugitaeshi" or "yobimodoshi," where new broth is added to the remaining soup in the pot. This process results in a thicker, more flavorful broth compared to its cousin, Hakata ramen. The noodles in Kurume Ramen are straight and slightly thicker than those used in Hakata-style ramen, perfectly complementing the aromatic and hearty soup.
