Anmochi Zoni introduction
Anmochi Zoni (あんもち雑煮) is a rare regional specialty born from the history and culture of Kagawa Prefecture. During the Edo period, sugarcane and sugar refining methods were introduced to Sanuki (present-day Kagawa), promoting the production of sugar—one of the "Three Whites of Sanuki" alongside salt and cotton. In wealthier households, the use of sugar in zoni, a traditional soup, became a way to enjoy its sweetness while symbolizing prosperity. This fascinating dish, which blends sweet red bean-filled mochi and a savory soup, is a true product of Kagawa's heritage and culinary creativity.
