Okayama barazushi introduction

Okayama barazushi is a sushi made with seasonal vegetables and seafood from the Seto Inland Sea. During the Edo period, Mitsumasa IKEDA, the first lord of the Okayama Domain in Bizen Province, encouraged frugal frugality, and issued a thrifty order called 'Shokuzen shall be one soup dish.' It is said that the common people rebelled against it, and they began to eat it as “bara-zushi” with fish and vegetables on top of rice with “one dish even if you put it on rice”. Today, it is loved by the prefecture as a local sushi eaten on the day of Hare during festivals and celebrations.
